I’m not sure if it’s because I don’t see them often or if it’s because they’re just really beautiful, but there is something about rainbows that can instantly brighten my mood. My cousin Denise made these cute rainbow cupcakes with homemade cream cheese frosting. Aren’t they a perfect way to celebrate the last weekend of summer?

How did she make those? They look like they would taste like blue moon ice cream! I don't even care for most cake, but those look really fun!
a.mae.zed, she separated vanilla cake batter into a number of small bowls, added a different food color to each one and then filled each cupcake liner by layering a scoop of each batter color on top of one another. 🙂
