This weekend it rained and was gloomy, and Alan and I started our search for a new apartment. I don’t know what the straw was that broke the apartment’s back, but one day, after realizing I hadn’t had a decent night’s sleep in a straight week, I decided enough was enough. I’m still hoping that the nearby retirement community will take me seriously and let us move in, but people keep telling me not to hold my breath. I did, however, hold my breath for this French onion soup tonight which took nearly two hours to simmer, but was worth every second. It has tender onions, white wine, toasted bread and piles of gruyere. It was amazing. Probably the best soup I have ever had. And I didn’t even think that I liked french onion soup!
We used this recipe and followed her advice and used a generous amount of wine. It was less than $4 for the bottle, but it made the soup so fragrant and rich.
We couldn’t afford a nicer bottle of wine, see, because we blew it all on a lovely hunk of gruyere which is ridiculous, especially when melted atop a toasty, pillowy piece of bread in a savory broth.
I know it’s not the prettiest French onion soup ever, but it was good.

It's definitely a perfect soup for a cold day — and so easy to make! (the challenge of not eating it while it simmers and is busy smelling really good is the hardest part haha)
I think I might try to make this, too! I love french onion. I hate to admit it but Elephant Bar has a really good french onion.
that's good to know, thai. I've never eaten there, although it looks cool and kinda reminds me of the ambiance of fry's.
