This week, I was in a documentary-watching mood, and finally watched Jiro Dreams of Sushi. It’s about an 85-year-old sushi chef named Jiro who owns a Michelin-rated sushi restaurant. It has only 10 seats and is in a Tokyo subway station! What makes his story so compelling is how completely dedicated he is to his craft and to achieving perfection. Here’s one of my favorite quotes from the movie:
